Hello friends! With Día de Canarias around the corner, it's the perfect time to whip up a classic Canarian dish: Ropa Vieja. This dish might remind some of shredded meat with a sofrito, common in many Latin American countries. However, the version I'm sharing with you is unique to the Canary Islands. Let's get started!

Ingredients:

  • 500g chickpeas
  • 500g beef (any cut suitable for shredding)
  • A piece of chorizo
  • 2 chicken thighs
  • A piece of pork
  • Red bell pepper
  • Green bell pepper
  • Onion
  • Garlic
  • Potatoes
  • Bacon (optional)
  • Fresh chili (add and remove as per your preference)
  • Spices: Sweet paprika, ground cumin
  • Fresh herbs: Parsley, oregano
  • Salt and black pepper to taste
  • Olive oil for frying

Instructions:

  1. Prepare the Chickpeas:
  • Start by boiling water. Once boiling, add the chickpeas to help them retain their skins. Let it boil for a few minutes.
  1. Chop the Vegetables:
  • Dice the red and green bell peppers, onion, and garlic into small pieces.
  1. Cook the Base:
  • In a large pot, add the chickpeas. Then, toss in large chunks of beef, chorizo, chicken thighs, pork, and any additional meats like marinated ribs. Cook everything in a pressure cooker for about 45 minutes.
