Hello friends! Today, we're preparing another beloved Canarian dish: Puchero Canario. This hearty stew is loaded with vegetables, meats, and is perfect for a comforting meal. Let's get started!

Ingredients:

  • 7 garlic cloves, roughly half a head
  • 1 corn cob, cut in half
  • 2 zucchinis or one piece of pumpkin, peeled and cleaned
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 300g green beans, ends trimmed
  • 2 small onions
  • 6 potatoes
  • Salt
  • Saffron or yellow food coloring for color
  • 150-200g chickpeas, soaked overnight
  • 1 sweet potato, cut just before adding to prevent browning
  • 500g mixed meat for stew (pork, chicken, beef)
  • A few leaves of cabbage, thick stems removed
  • Water

Instructions:

  1. Prep the Ingredients:
  • Trim and chop all vegetables as described.
  • For the cabbage, cut out the thick stems to avoid bitterness.
  1. Prepare the Green Beans:
  • Trim the ends and any rough edges from the green beans.
