Hello friends! Today, we're making Carne Fiesta, a staple dish at Canarian festivals and romerías. This simple and flavorful pork dish is typically served with papas arrugadas (wrinkled potatoes) and mojo sauce. Let's get started!

Ingredients:

  • 600g pork, cut into small cubes (adjust as needed)
  • 1 glass of white wine
  • 1/2 glass of olive oil
  • 4 cloves of garlic
  • 1 tablespoon salt
  • 1 tablespoon thyme
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 2 small bay leaves

Instructions:

  1. Prepare the Garlic:
  • Peel and crush the 4 cloves of garlic. A little trick: add the salt to the garlic while crushing to make it easier. Once the garlic is well mashed, set it aside.
  1. Marinate the Meat:
  • Place the pork cubes in a large bowl.
  • Add the crushed garlic to the bowl. To get all the garlic out of your mortar, pour the white wine into the mortar, swirl it around, and then add that wine-garlic mix to the bowl.
